LOL, it's not surprising! He's just referred to in an off-hand remark of Klaus's in S1E2. Five has just told Klaus that he was with Delores for over 30 years (not having revealed that she's inanimate, of course), and Klaus says: "God, the longest I've been with someone was... I don't know, three weeks. And that's only because I was so tired of looking for a place to sleep. He did make the most fantastic osso buco, though."
In the corner of Umbrella Academy fandom where I'm hanging out now (aka the Discord server) the Osso Buco Man is a bit of a running joke—the joke being how little canonical evidence we need to create vast swaths of fanon. Because actually Dave is only barely more developed than the Osso Buco man, especially in S1 (he has, what, two lines? And under five minutes of total screen time?) and yet Klaus/Dave is the most common Umbrella Academy pairing on AO3.
And hey, I've found two Klaus/Osso Buco Man fics on AO3 that I really enjoyed!
